White and Milk Chocolate Cookies/Shortbread
I do love to bake!. I'm quite new to it though and have only really started to test my baking skills this year now l have a bit more time. As with everything l have made many mistakes but l was making some White and milk chocolate cookies and changed the way l added the butter and sugar and low and behold l really liked what can out!. As you'll notice with my title they were supposed to be cookies but l think myself they are the the like a chocolate chip shortbread. So far everyone trying them has absolutely loved them! but before l list the ingredients l warn those on a diet or eating healthily to stop here as they are not for the figure watching cookie lover!. To be fair though l think you could just make the cookies quite small as they can be quite thick so you can have a treat with the rest of the family if you are watching your weight.
So here's the ingredients list l used...
1) Butter (Softened) 225G
2) Golden granulated Sugar 140G
3) 1 Egg Yolk
4) 2 tsp Vanilla Essence
5) Plain Flour 280G
6) White Chocolate 70G
7) Milk Chocolate 70G
With the Chocolate if you want less that's no problem l just find these amounts for us give a lovely full cookie.
So you have your ingredient list. All good? let's get started then.
1) Place Butter and Sugar into a bowl and rub together with hands. So this will give you texture of a paste rather than breadcrumbs as you have for cakes.
2) Add yolk and Vanilla Essence to the butter sugar mixture and mix together.
3) Sift Flour, Add your Chocolate and start mixing together. Now you'll find this great for the bingo wings but don't use a mixer it just didn't turn out the same for me when l tried. Here's a picture of my mixture i'm left with after adding all the ingredients and mixing.
4) Take 2 teaspoons (depending on how big you want them to be) l then roll them in hands into a ball and flatten with the palm of my hand. Place on your tray which will be covered with greaseproof paper or greased with butter. ( l prefer greaseproof paper). Place in a preheated oven, l have mine at 170 on my fan oven in the middle of the oven.
5) l only leave mine in about 15 minutes as soon as the edges start to brown. Leave to cool on a cooling rack and your ready to devour!!. Get yourself a cuppa or coffee put your feet up and enjoy the fruits of your labour!.
